Prawn Patio
Background:
Quick, flavorful and healthy is kind of the golden trio for a meal. Our newest collaborator Tamanna Shah created a super tasty Indian seafood recipe packed with deep notes of curry leaf and tomato. Using your seven Indian Spice starter kit, you can get this dish ready in a flash and be dreaming of flavor for days to come.
Time: 20 minutes
Ingredients:
- 2 cups medium shrimp, shelled & deveined
- 5 Roma tomatoes, puréed
- 1 tbsp ghee or neutral oil
- 5 curry leaves
- 1 medium onion, puréed
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 green chili, finely minced
- 1/2 tsp Mumbai Spice Company turmeric
- 1 tsp Mumbai Spice Company cumin powder
- 1/2 tsp Mumbai Spice Company red chili
- 1/2 tsp Mumbai Spice Company garam masala
- 1 tsp sugar
- 1.5 tbsp white vinegar
- Salt to taste
- 1/2 cup cilantro leaves, chopped
Directions:

Heat ghee or oil in a pot, and sauté onion purée until golden.

Add curry leaves, ginger, garlic and green chili. Sauté until fragrant.

Add the tomato purée and cook until oil separates from the mix. Be sure to keep stirring so mixture doesn’t stick to the bottom.

Add turmeric, cumin, red chili, garam masala and salt to taste. Stir and cook for a minute or two, then add sugar, vinegar and the shrimp. Cook just until shrimp is no longer pink - about 2 minutes tops - and remove from heat.

Stir in cilantro and serve hot with rice and/or your choice of bread.
